This sea salt hot chocolate is my new favourite drink for coming back indoors on a cold winter’s day. The recipe makes enough for two, but it’s easily scalable to however many people you have coming through the front door.
- 100g dark chocolate
- 250ml double cream
- 250ml milk
- 1 large pinch of sea salt
- 1/2 tsp vanilla extract
- 10g golden caster sugar
- 1 egg yolk
Chop your chocolate into pieces using a large, sharp knife. Add in to a small saucepan along with the milk and the cream.
Put on a medium heat and let the temperature rise slowly. Once the chocolate starts to melt, add in the sugar, vanilla and salt.
Stir gently until the chocolate is fully melted. Taste to make sure the salt level is right for your tastes (add a little more if you want a saltier kick).
Remove from the heat and whisk in the egg yolk – this will thicken the mixture.
Run through a sieve (if you’re wanting to be really fancy) and pour into two cups. Serve straight away.
