Holy. Crap. No, definitely not sharing these with anyone!‘ Just an extract - the publishable version, that is - of my internal monologue as I bit into one of these Nutella salted caramel brownies. I love sharing food, I love sharing the joy. But it would appear on this occasion my selfish side was taking over. No one else was being invited to this particular brownie feast.

Subsequently, it turns out that it’s not good for you to eat almost an entire tray of brownies by yourself in under two days. But we live and learn, don’t we? OK, I haven’t learnt and I have no regrets.

I’m a fan of simple recipes. Like most of you who read this, I’m quite a busy person and little time saving hacks and fast recipes are often the difference between me baking something of an evening and not.

That’s why this recipe appealed to me - there are three ingredients in the basic part of these brownies. Yes, three: Nutella, eggs and flour. Who doesn’t have time to mix three ingredients together? A 2-hour, 27-ingredient Ottolenghi masterpiece, this is not.

I almost put an attention-grabbing title on this post (OK, including ‘Nutella’ and ‘salted caramel’ is still pretty attention-grabbing for most of us), but the salted caramel sauce does take a bit longer than ‘4 ingredient brownies’ would imply.

Is it worth taking the time to make the salted caramel sauce yourself? I’d say so. We’ve already done a sneaky shortcut by using Nutella, so a let’s take time on the salted caramel. If you don’t have time in your life to make the salted caramel though, that’s OK too. Just buy a jar. It probably won’t be quite the same, but it’s better than not having chocolate brownies, right?

There’s always great debate on how ‘gooey’ the inside of a brownie should be, so the cooking time will vary slightly depending on your preference. I like mine with a bit of goo, but also fully baked, so I usually put mine in for about 20 minutes. For cake-like brownies, up it to almost 30; gooier will take about 15.

Simple, yet incredibly satisfying, I think everyone has time in their life to make these brownies.

Nutella salted caramel brownies

I absolutely LOVE these Nutella salted caramel brownies. They are incredibly simple to make, and taste absolutely delicious. This recipe makes about 20 or so little squares of brownie goodness.

Ingredients

for the brownies:

  • 200g Nutella/equivalent
  • 100g plain flour
  • 2 eggs

for the caramel:

  • 75g light brown caster sugar
  • 100ml water
  • 50ml double cream
  • 50g butter
  • 1 pinch of sea salt

Instructions

Pre-heat the oven to 160ºC.

Start by making the caramel. In a medium-sized pan put the water and the sugar, stirring over a high heat. Bring it to the boil and let it simmer until it reaches about a third of its original volume.

At this point take it off the heat and add the butter (in cubes, as this will melt quicker), stir until the butter melts than add the cream. Put back on a medium heat and bring back to the boil. Let it boil, stirring every 30 seconds or so until the colour darkens and it thickens. It should coat the back of a metal spoon. Set to one side.

In a large bowl, beat the flour, eggs and Nutella, mixing until they are fully combined and no flour is left showing. Tip into a lined 20×20 cm tall-sided baking tray. Smooth the top out and then drizzle with the salted caramel sauce. Bake in the centre of the oven for 10 minutes.

Allow to cook and then slice into small squares. Serve covered in more caramel sauce if you have it left.
