Romano pepper and goats cheese quiche

It’s summer! It’s finally here! The sun! The heat! The picnics! Or at least it was for a couple of days last week.

So it turns out that summer in Edinburgh was two days, and now it’s pretty much autumn. Even as I write this I’m questioning whether I should really have the window open and the bowl of strawberries on my desk feels somewhat wrong. There’s also a really interesting cover of a Taylor Swift song (who doesn’t love a bit of Swifty, at least in secret?) on the playlist I’m listening to - but that is completely beside the point.

I hear tell that summer actually exists in other parts of the world, so it feels right to talk about quiche. I bloody love quiche. It’s the ultimate summer picnic dish - a combination of crisp pastry, light interiors and delicious flavours. Like most egg dishes it’s also pretty versatile - it copes with everything in from vegetables to fish, cheese to herbs - and it’s the perfect alternative to sandwiches that have curled up at the edges having sat in warm tupperware for the last three hours. Because let’s face it, no one wants a dead sandwich.

As someone who thinks raw tomatoes are the work of the devil, I’m always slightly reluctant to put them in quiches (it’s just going to make my face contort into something that no one wants to see), but even I will acknowledge that the colour they bring really makes a quiche. So when I was shopping and came across some Romano peppers (the big long red ones, I never remember their name either, don’t worry) I had a little moment of inspiration, picked them up and legged it to go find some goats cheese (and yes, I am aware how ridiculous my life sounds, I just happen to like it that way).

It’s a great balance of cheese, pepper and onion all pulling together to taste of summer. I served mine with a peppery green salad, lightly dressed and had an indoor dinner picnic in my living room; naturally, it had cooled off too much outside to really have it out in the park but such is life. Summer will hopefully come around again before long

Romano pepper and goats cheese quiche

This recipe is one that I’ve made up as I went along – taking from other quiches in little quantities here and there; the pastry though comes from my Great British Bake Off book, as I can still never remember the proportions of the ingredients. It makes enough for two small quiches, each serving two. So it’s either quiche for four, or one for now and one for the freezer.

for the pastry:

  • 250g plain flour
  • 1 pinch of salt
  • 125g butter
  • 3 tbsp cold water

for the filling:

  • 1/2 onion
  • 2 eggs
  • 100ml milk
  • 1 tbsp plain flour
  • 1 Romano pepper
  • 100g log of goats cheese
  • salt and pepper
  • 1 tbsp rapeseed oil

Instructions

Make your pastry by putting the flour and salt in a bowl then cutting the butter into cubes and adding it in. Toss it all together using your hands, then rub it all through between your finger tips and thumbs so it becomes the texture of breadcrumbs. Pour the water in gradually, you want to use enough to just bring the crumbs together into a dough. Once together wrap in clingfilm and rest in the fridge for 20 minutes so the butter hardens again.

After it’s chilled, roll out the dough on a lightly floured work surface, then press into your tart dish (or dishes, depending on the size you use). Push down into the base, and trim at the top – if you’re using a metal fluted dish you should be able to just push down on to the edges for it to cut. Spike the bottom all over with a fork and bake in the oven at 200ºC for 10 minutes, or until a very light gold. Blind baking like this will avoid the embarrassment of a soggy bottom later on.

Finely dice your onion – the smaller the pieces the better – and then slice your pepper (in half down the middle and the horizontally into 1-2cm chunks). Using a heavy based frying pan, heat up the oil and use it to soften the onion. Once almost softened, add in the pepper and fry for about 2 minutes on a medium heat to start cooking the peppers. Set aside to cool a little.

In a jug, beat your eggs and then whisk in the milk, flour and seasonings – whisk thoroughly together ensuring there are no lumps from the flour. Add the onion and peppers into the just and mix once more, then pour into the prepared pastry case(s). Scatter small lumps of goats cheese all across the top.

Bake in the centre of the oven at 180ºC for 15-20 minutes, or until golden and firm on top.
